Host 2023: a schedule rich in innovations, discussions, and meetings

Among the main novelties of this edition is the first World Panettone Team Championship, but the eagerly awaited events organized by partner associations are also making a comeback.

At Host 2023 - at fieramilano from 13 to 17 October - the new trends of innovation and sustainability also translate into exciting races and competitions within a schedule with more than 800 events.

 

 

National Teams Compete for the First Time

 

Among this year’s new entries, the Panettone World Championship stands out, for the first time in this format organized by the Academy of Masters of Mother Yeast and Italian Panettone. The finalist nations of the first edition are Argentina, France, Germany, Italy, Poland, Spain and Taiwan; representing Italy will be master leaveners Claudio Gatti, Aniello di Caprio, Giuseppe Mascolo and Beniamino Bazzoli.

 

“With this new format, we make the production of panettone visible”, explains master pastry chef Claudio Gatti, President of the Academy, “live, you can see every step comparing - and without the possibility of replicating - with the same raw materials: an excellent showcase for new trends, like salty, stuffed and soaked”. One of the main advantages is internationality: “Contamination comes from the territory. Panettone is Italian, but we are open to sharing and comparing with the whole world. Thus, competition turns into a comparison on innovation. That’s why for this first edition we decided to consider chocolate panettone as traditional and salty panettone as innovation”.

 

 

From Bar to Food Service, a Complete Range of Challenges and Meetings

 

But in terms of challenges to the last flavor there is much more at Host 2023. In the cafeteria, events organized by ALTOGA - National Association of Coffee Roasters and Importers and Food Wholesalers and AICAF - Italian Academy Masters of coffee return. The roadshow format across the booths by Coffee Addition stands out with Gianni Cocco and challenges between baristas: in the Grand Prix of Italian Cafeteria baristas and cafeteria staff from Italy, and from AICAF associated countries will face each other, while the Moka Challenge is a competition for everyone. For the Lags Battle Italy/ World Lags Battle, ALTOGA collaborates with Latte Art Grading System for the Italian national semifinal and then the world finals of an event with 50 countries.

 

In catering, the focus will be on professional updating. ANIMA Confindustria Meccanica Varia with its associations and with EFCEM Italia will create a Food-Technology Lounge with meetings, technical-regulatory updates, business appointments and insights on market trends.
