Automation and sustainability at the centre of Host 2023. Including in gelato

In this sector as elsewhere, those involved in the supply chain are looking for innovative ways to save energy and optimise human resources, while ensuring that quality remains high.

Among the sectors of Host 2023 -- at fieramilano in Rho from 13 to 17 October  – one that stands out with the most innovative proposals is Gelato. And the trade fair is the place to meet those involved and learn about new trends. And about the new technologies that enable them, allowing for example the use of new ingredients, for example in crossovers between mixology and gelato. The aim is to find the perfect combination between spirits and gelato, and get the right balance between flavour, sweetness, creaminess, and texture.

 

“Our machines are no longer used just to make traditional beverages but have branched out into new applications, including cocktails and aperitifs,” says Roberto Valsasina, export manager of Ugolini Milano. “We are also seeing a need to reduce the operator's work to a minimum, which means making machines as simple and automatic as possible.” And while on the one hand there is a drive towards automation, on the other, the idea is to make machinery increasingly sustainable: “Our machines have become greener, with features that limit the environmental impact of the products. We have introduced a range of solutions that promote eco-sustainability: new refrigerant gases, high-efficiency compressors and brushless motors."

 

More and more attention is being paid not only to sustainability, but also to responsibility. “Our goal is to reduce both energy consumption and environmental impact. Air conditioning and heating come from heat pumps and solar energy, production processes are carbon-free and we are using eco-sustainable plastics and plastic-free packaging. All this has enabled us to obtain ISO 14001 certification,” Valsasina says, finally.

 

Automation and sustainability have become goals for companies and their customers, a trend also confirmed by the general manager of Atosa Italia, Luca Marini: "We have noticed a strong focus on energy saving in restaurants and a growing demand for high-tech equipment, both to save electricity and to optimise staffing. The technology we are using is that developed with industry 4.0, which allows the various appliances in the kitchens to interact with each other. We will present a fryer at HostMilano featuring a mechanical arm that works by itself, in addition to which we will be launching ovens with heating elements distributed at 33%, so the cooking temperature can be reached more quickly.”
