How does the table change in hotels and the away-from-home market? The ultimate destination to discover it is Host 2023, at Fieramilano in Rho from 13th to 17th October. Meanwhile, the HostMilano Observatory, through constant dialogue with all players in the industry, has attempted to outline some of the most interesting trends.

 

An impeccable yet imaginative mise en place is becoming popular, where design plays a pivotal role. The classic white table setting is not outdated but rather enhanced by incorporating colors, fun shapes, or 'artistic' details on the plates and beyond. With the increasing acceptance of forgoing tablecloths, many are adopting a more artisanal and authentic character for their tableware. Tables are now adorned with plates and glasses featuring playful and vibrant shapes and colors. Different materials, such as melamine and porcelain, are combined to create plates and glasses with vivid colors and unique finishes.

 

The use of color not only holds aesthetic value but also influences the customer’s perception: armochromy also takes over the table, and it is crucial to choose colors based on the desired effect on diners with the mise en place. For instance, for establishments aiming to provide customers with a sense of well-being and relaxation, armochromy suggests using blue, dusty azure, lilac, or periwinkle. However, the mainstream trend focuses more on high-quality materials, such as recycled or recyclable plastics with high performance, natural fabrics, and, in general, durable materials - hence, also adopting an evergreen style - to reduce the environmental impact of frequent changes.
