Professional coffee machines at Host 2025: sustainable technology driving the future

From Made in Italy to global exports, the industry is growing thanks to IoT, AI and sustainable materials. At Host 2025, the latest innovations will be in the spotlight at SIC - International Coffee Exhibition.

A Made in Italy excellence making a name for itself in the world: professional coffee machines. The Anima Confindustria Studies Office estimates the value of Italian production at 550 million euros. And, underlining the sector's strong international vocation, more than 75 percent of this production is for export. According to Mordor Intelligence, globally the market for professional machines is estimated at about 18 billion euros, and will grow at a CAGR of 6 percent, touching 25 billion by 2030.

Driving this growth are innovation factors ranging from advanced automation, AI, and IoT connectivity to precision extractions, new water filtration and treatment technologies, touchscreen and user-friendly interfaces, and the use of new sustainable materials, as well as ergonomic, yet style-conscious design. Here’s what some of the top players in the industry think about it.

As Andrea Clerici, Global Business Director at Cimbali Group, explains, “The industry is undergoing an evolution driven by four key drivers, some new trends, others in consolidation: technological innovation, personalization of the experience, the importance of after-sales, and sustainability. Innovation is a strategic asset for Cimbali Group, which is why we talk about 'connected smart equipment': our machines, whether traditional or super-automatic, have the ability to be connected and included in a broader ecosystem, offering constant control of machine performance and functionality, guaranteeing an always optimal level of quality.”

“Smart technologies and AI are increasingly relevant, enabling advanced automation and personalization of the consumer experience,” agrees Giovanni Giaquinta, Marketing Manager at Dalla Corte. “Remote controls enable more efficient management, optimizing resource use and predictive maintenance. Many companies are also investing in innovative materials that improve thermal efficiency and durability, as well as new design solutions that not only improve aesthetics, but also ergonomics and ease of use. On the other hand, sustainability is a top priority, with reduced energy and water consumption and recyclable and plastic-free materials.”

Also along the same lines is the comment coming from La Marzocco: “IoT and connectivity generate change at every stage: from the production of the machines to the barista's experience and that of the passionate coffee lover. Connectivity also provides new tools for sustainability, bringing experimentation to the origins of the supply chain, to safeguard this raw material threatened by climate change. Improvement is already happening at the industrial level, with even higher standards of efficiency, control and innovation: by collecting data we perform constant monitoring on the lines, varying production parameters and optimizing them for ever more precise and high-performance processes.”

“Our sustainable innovation approach drives us to seek solutions that speed up the workflow while guaranteeing standard quality in the cup, reducing waste and energy consumption, as well as the cost of training,” summarizes Marco Feliziani, CEO at Simonelli Group. “For example, we have introduced new technologies developed with AI that connect the machine and the grinder, which share the same recipes through the portafilter. As for sustainability, it is now a real business approach that spans from design to marketing, from operations to sales.”

Novelties and innovations that can be previewed in the Bar-Machines for Coffee-Vending area, as part of SIC - International Coffee Exhibition, at Host 2025, at Fiera Milano’s Rho fairgrounds from 17 to 21 October 2025.
