Innovation in the world of chocolate at Host 2023
Chocolate is one of the world's best loved foods, and yet much remains unknown about its characteristics and potential. ChocolateCulture@Host23 is dedicated to discovering the creativity and art of master chocolatiers, who are part of Italy's rich cultural heritage. The event will highlight how chocolate can play a key role in culinary creativity also through innovation, for example with studies on molecular combinations.
Innovation in today's world of chocolate is characterised by an ongoing search for new varieties, types, and applications. More specifically, the master chocolatiers are working hard to create new, unforgettable taste experiences for consumers that are also environmentally sustainable. To further underline the centrality of research and innovation, the most advanced technologies and the best-performing production systems will also be presented.
An immersive experience in a living laboratory
ChocolateCulture@Host23 will offer a space devoted entirely to chocolate, with training sessions and master classes, while Italian and international chocolate experts will offer their insights. Visitors will have the opportunity to learn how chocolate is made, how to preserve its natural flavours and aromas, and even how to create a product that can set itself apart from other products the market has to offer.
The workshop will run from 9:30 am to 6:30 pm and will involve the best students from cooking and pastry schools. During the master classes, master chocolatiers, pastry chefs, gelato makers and chefs will reveal their recipes and secrets involving chocolate. Ample space will also be given over to finding out about the regions of the CocoaBelt, the cocoa plant and its fruit, as well as exploring how cocoa processing is evolving to embrace economic and environmental sustainability.
