Catering and cold industry: all the “sustainable” news at Host2021

The focus, for all companies, will be on elements such as creativity, innovation, attention to experience and food security.

Sustainability? Yes, thanks. This trend has been growing for some years, but has now become a real must for the entire Ho.re.ca sector. So much so that the catering and cold industry have not wasted time in adapting and anticipating the all-around evolution of a concept. “We in the world of refrigeration, already with the Montreal Protocol, have anticipated the times, but change is continuous”, says Barbara Caron, Marketing Manager of Criocabin. Sustainability, but combined with innovation and hygiene, are confirmed as some of the trends that will mark the future of catering also for gruppo Epta. "The global situation has prompted greater reflection, both on the part of the players in the supply chain and consumers, towards ethical principles - let the company know - Customers, for example, are increasingly attentive to the origin of ingredients and prefer organic, national and zero kilometer products, which are perceived as elements of reassurance. In addition, catering is already embracing the Circular Economy model declined, as well as in a strict selection of references, in the design of the layout and equipment with low energy consumption and made of durable, recycled or completely recyclable materials, according to the principle of the 3 Rs: Reduce - Reuse - Recycle ”.

 

On the new-entry front, for Criocabin everything will be declined according to the dictates of the so-called “Project Zero”, the policy aimed at guaranteeing 80% reductions in product maintenance. "We design and build to ensure high energy efficiency and our goal is to achieve zero environmental impact", continues Caron, who underlines how these principles have recently been implemented in the creation of custom-made counters for the new Chocolate Hall in Harrods (“a one-of-a-kind location where the specific Criocabin technology for chocolate and haute patisserie is combined with a custom-made design for such a unique client”).

 

For the Venetian company, as for Epta, the appointment will be at Host2021, a moment considered essential for more than one reason. “It will be the first opportunity to meet customers again, to stimulate moments of sharing and dialogue with all professionals in the sector”, confirm the multinational that will present the solutions studied by its brands Eurocryor, Misa and Iarp at the fair. The focus will be on elements such as creativity, innovation, sustainability, attention to experience and food security, as tools to restart and welcome increasingly aware and demanding consumers. "Among these, the new refrigerated display cabinets for displaying desserts stand out, which combine design and functionality; or cells for the best preservation of ingredients, all thanks to the use of an innovative antibacterial system with silver ions for total protection, 24 hours a day, 7 days a week, and permanent for its entire service life" .
