The world of desserts is in a new season where the accent is on “reduced” portions and on sustainability in the choice ingredients.
Luxury and sustainability. In recent years pastry, especially that served in restaurants, has seen great change. The presence of ever more specialised professionals, for example, has led to a reduction in the size of portions: briefer experiences but ones that offer greater pleasure for the palate. One such case is Bussy, the Italian company that now produces waffles in formats that range from extra-large to mini, the preferred choice in countries like Italy, in line with the popularity of finger foods. But the fact that in today’s patisserie sector, ingredients and aesthetics are of primary importance, with a search for ever more original ingredients that are respectful of the environment and of those who produce them, is also seen in the production of waffles with short, “clean” labels: they are 95% made of sugar (accounting for around 30%) and flour, a very small amount of lecithin, and egg, but no palm oil or GMO products. And waffles are now also a visual treat; hence the necessity to differentiate the range with new shapes, colours and decorations.
Meanwhile, ease of use was what mattered most in the 2020 “recipes of Babbi, which in recent months launched its #riapriAMOciallaVITA campaign (the hashtag means “let’s open ourselves up to life again” with some letters capitalised to spell out “I love life”), working alongside its clients with materials to support the resumption of activities – videos, branded personal protection equipment – and staying in constant touch with its own sales network. On top of that, and in keeping with trends being seen in the bakery sector, Babbi has decided to also offer a complete panorama of products for totally safe breakfasting and banqueting. Products that are easy to prepare from just a few ingredients, such as mixes for Brownies, Red Velvet, Muffin, Cup Cake, Shortbread, Crepes and Waffles, and Custard Cream; all strictly gluten-free and ready to be personalised with fine pistachio and hazelnut creams, or embellished with ripples and cream spreads.
