What will professional kitchens be like in the New Normal? What equipment will chefs and cooks from the post-pandermy period rely on? To find out, we asked two of the major national and international players in the sector, both present at Host 2021. “We will present a preview of a model of the new version of our range of multi-purpose static ovens. The new features, which will be supported by a board designed for 4.0 technology, are designed to facilitate remote oven management, in line with the evolution of contemporary technologies, but without losing sight of ease of use, one of the values key of Zanolli”, says Sara Spagnuolo, Marketing Manager of the Veronese company. Which underlines how Host2021 will be an opportunity to also illustrate the new version of its dough sheeters, reworked in an even more modern and functional way. But how much has the attention to innovation and energy saving increased in the last period? For this reason, rather than growing, the focus on energy saving has evolved by rationally incorporating the technologies of the moment. Just think of our particular type of electric oven, which is the only one with an open mouth equipped with a patented system, capable of creating a blade of air to counteract the escape of heat. From a more general point of view, we are pleased to note that the digitization of the controls allows for an ever-increasing optimization of cooking, with a consequent reduction in waste", adds the manager.
Host will also celebrate the moment of global restart for MKN Kurt Neubauer factory GmbH & Co. KG, a German company that, not surprisingly, will bring the entire series of professional ovens from its catalog to the Rho Fiera pavilions. "From modular equipment to customized 'suites', the flagship product that we will present at the fair will concern a flexible solution, capable of optimizing time, space, efficiency, quality, consumption and satisfaction for chefs", says Beatrice Stock, Marketing Director of MKN GmbH & Co. KG. “This is the only cooking application that sees a pan equipped with its own automatic cleaning system”. More generally, however, participating in an exhibition like Host will be a source of inspiration for closely observing current trends, especially in the technological field. “One of the biggest obstacles in our industry is a lack of skills. For this reason, among our leading products, there is no shortage of automated solutions such as those concerning a professional kitchen based on Cloud technology, or the navigation system capable of guiding cooks in their operations, always ensuring the highest quality of prepared foods”, concludes Stock.
