The Panettone World Championship returns to Host with an exciting new formula

Rather than involving individual pastry chefs, numerous national teams will compete against each other at this year’s finals, organised by Accademia Maestri del Lievito Madre.

Host 2023 (at fieramilano, from 13 to 17 October) will once again be collaborating with Accademia Maestri del Lievito Madre e del Panettone Italiano, the Academy specialising in mother yeast and Italian panettone. The spotlight will fall on the traditional Milan cake for the third edition of the Panettone World Championship, an exciting challenge in which various national teams will make their own artisanal versions of panettone in the hope of being crowned winner at the final that will be held during Host 2023.

 

It is no coincidence that this year’s theme will be Panettone around the World. Members of the national teams will be selected and nominated by professional schools identified by Consulates to the Accademia dei Maestri del Lievito Madre e del Panettone Italiano. In the competition, national teams will take on some of the best Italian and international pastry makers, with the best partner companies that produce high-quality ingredients at their side.

 

HostMilano is the ideal stage for the Panettone World Championship, whose aim is to promote the excellence of artisanal panettone, comparing the different cultures of those who make the confection starting with mother yeast, a true identity factor that characterises each local area.

 

This was seen in the winners of the 2021 edition, when leading pastry chefs battled it out individually, with the winners proclaimed at HostMilano. These Italian chefs expressed a gastronomic tradition that was far removed from its Milanese roots, though no less rich and well established. The winner was Sal De Riso, of the Sal De Riso Costa d’Amalfi pastry shop in Minori (Salerno), whose recipe had hints of the aromas and flavours of the Amalfi coast. In second and third place, two other chefs from the Campania region: Aniello Di Caprio of Lombardi Pasticcieri in Maddaloni (Caserta) and Giuseppe Mascolo of the Al Sombrero pastry shop in Visciano (Naples).
