The "Panettone World Championship 2025" project is ready to start!

 

After the success of the first edition, the Academy of Masters of Sourdough and Italian Panettone is organizing the second edition of the World Panettone Championship for teams, the only one with products made "live". The 2025 edition is organized in collaboration with Host Milano Fiera and will see 12 teams of masters from as many countries compete. The event aims to showcase the international excellence of artisanal Panettone by comparing the different cultures of those who produce this dessert starting exclusively from sourdough, a true identifying and characteristic factor of each territory.

 

We have reached the 4th edition, after the individual competitions of 2019 and 2021, and the extraordinary international team edition of 2023, whose success was celebrated and documented through the pages of the publication "A World Panettone". With the experience gained, increasingly motivated to grow the event globally, the Academy's Board immediately set to work to form a dedicated working group. There are many new features, concerning not only the products but also the Regulations (already published on the official website panettoneworldchampionship.com), the conduct, and the visibility of the competition.

DATES

 

From Tuesday, October 14 (opening ceremony in Verona) to Saturday, October 18, 2025 (Final).

Competition: Wednesday, October 15, Thursday, October 16, and Friday, October 17 in Verona, at the Polin laboratories.

Final: Saturday, October 18, at Host Milano Fiera, in Milan.

 

 

TEAMS

There will be 12 teams, representing 12 different nations covering various continents. They will work simultaneously, each in a dedicated lab box. Numerous registration requests have already been received, which will be validated during the ongoing selections in the respective countries, through schools, associations, reference professionals, or during sector events.

in the previous edition, each team will consist of three competitors (including a spokesperson Captain nominated from the three), plus a Team Manager.

                        

The teams will be called upon to create and present, from October 14 to 18, various specialties, all strictly made with Sourdough from their own country. Among the competition trials, alongside the Classic Italian Panettone and the Chocolate Panettone, stands out the category of the Great Innovative Leavened Product, which this year will feature Gelato. The assigned theme, "Territory Contamination," invites each team to create a product that enhances one or more typical ingredients from their own country.

 

To evaluate this new category, there will be a special technical jury composed of World Gelato Champions, who will join the other competition juries in awarding a special prize and a points Bonus, crucial for the Overall Ranking and for the election of the winning team of the 2025 edition.

 

The championship regulations are completed by three other mandatory preparations: the "Circular" Single Portion, based on traditional panettone dough, the "Sourdough Flower," made with refreshed sourdough, and the "Freely Decorated Panettone," an expression of creativity and technique.
