Pizzas of the future

a Series of lessons are not… a pizza. Throughout Host, NIP - Nazionale Italiana Pizzaioli (Italian pizza-makers association) will be holding courses to teach new work systems in pizzerias: the sessions will range from the most technical skills, such as the new water-based doughs, to the most recent interpretations of tradition, like the Classic Pizza, Pizza by the Metre and Pizza with Neapolitan Art, through to the new taste frontiers with Diet Pizza, Gluten-Free Pizza and Kamut Pizza. At the end of the courses, on Friday 18th, the masterpizza makers of Record Pizza Men will attempt to set the Guinness record of the biggest sweet pizza in the world, a whopping three storeys high.
