The New Coffee Culture in Russia

In Russia coffee is one of the most popular drinks. The culture of its consumption is still developing in different ways from other countries, but the most established ways of consuming coffee is currently in Restaurants and Bars.
There are specialized coffee chains such as Starbucks, Coffeshop and Coffeehouse etc.
It is acknowledged that in general Russians prefer to drink coffee before eating, or both, rather than after like in other cultures who predominantly drink after eating.
It is hard to identify the “most popular” coffee in the Russian market, however universally the following companies provide equipment and special services that are high demand. For example brands in HoReCa such ad Danesi Caffe, Illy, Hausbrandt etc. Restaurateurs in Russia generally believe in basing coffee and drinks on espresso, therefore the Italian way. This explains why the most popular brands are produced by Italian manufacturers. The Italian way is dark roasted coffee beans,but this method is slowly being replaced by different “modern” methods.
This significant change in the coffee market is represented by the development of fresh roasted coffee beans. This is considered to be the New Coffee Culture.
In the past, especially in the US and in Scandinavia, the most popular coffee was fresh or white roasting, in our country this has been always been different. Nowadays, coffee is being brewed through alternative methods and can be compared with a variety of wine flavor characteristics.
In Moscow and St Petersburg coffee bars are starting to appear with various types of “new” coffee being offered.Baristas are starting to use alternative methods of making coffee. They are opening to “coffee geography” which differs in taste and sourced from various countries. Until recently this had not been offered to clients.
There is still a stigma with breaking the common rules in restaurants, but something is starting to change: restaurants are starting to pay attention to the quality of beans, water and milk they are using for coffee. As this is happening, the prestige of professionals is emerging for this new wave of Coffee Culture.
