Gardelli Specialty Coffees, Forlì – Coffee bar and roaster
From barista to roaster. It’s not something you can do overnight. To do this, you need training and education as Rubens Gardelli, the recent winner of two Italian championships - Brewers Cup and Coffee Roasting - can attest to. In 2009, he transformed his bar into a coffee bar with artisanal roasting with the name of Gardelli Specialty Coffees.
He has studied the world of coffee and he began his adventure with a small roaster with a capacity of 200 grams of coffee. Continuous research allowed him to improve his ability to choose raw coffee, and he typically tastes 40 to 50 samples along with his workers before choosing a coffee. He’s also studied various ways of roasting. Now he works with a 5-kilogram roaster that he uses for his coffee bar as well as other bars. At the counter of Gardelli Specialty, one can choose from among the exclusive blend called Cignobianco and a range of 6 to 7 specialty single origins – all coffees that are 100% traceable. The baristas don’t just serve coffee. They share their knowledge, their training and provide advice, which is fundamental says Gardelli “so the beverage the customer gets reflects the original quality of the raw coffee.”
